You are missing SKILLS. Quake III requires speed, and good judgement with
weapons. Read some quake strategy guides and you may get some ideas on how
to more quickly develop the skills you will need to defeat the bots.
Playing online will help too, since the players there will generally be
even better than the bots. Most good players can defeat every level in
singleplayer on nightmare. A nice guide can be found here:

Don't feel bad, when I first started I could barely move and shoot at the
same time. I was amazed when I went online and saw how some players could
move. I named myself sittingduck because I was exactly that... everyone just
killed me at will. It just takes time to develop the necessary skills!
New players love to accuse good players of cheating, because they just can't
believe it is possible to be as good as some players get... trust me it's
possible.

I'm trying jumping now every time someone gets near me and that helps.
I'm tweaking the mouse sensitivity every few games to find an optimum
response and I think that could help.

Nameless is awsome! Thanks for sharing the link.
Probably I didn't really understand what Tribulation is all about, however.
Is that some kind of mod, or does it use scripted rocket-jumps or something
like that...? Sometimes I just saw "impossible" jumps without noticing any
rocket around.

Tribulation is just a trick video. Some of the jumps you see are taking
advantage of what is commonly referred to as the "bounce bug". If you fall
from high enough to damage yourself, and have absolutely NO lateral movement
when you land, you will bounce as if you hit a jump pad.
There is no mod, and no scripts. Those guys are just THAT good.
